Lastly, chicken thoughts are chocked full of great nurturist like thiamine, niacin, as well as vitamins B and B12 which are great for the metabolism and will help you and your family build strong muscles.

Oven Baked Chicken Thighs With Dijon Cream Sauce 

If you are looking for something rich, creamy, and satisfying that will feed the whole family then these oven baked chicken thighs will do the trick. Combining heavy cream, and sharp dijon mustard with a few other basic ingredients this dish is simple to prepare and is always greeted with appreciation. 

The critical part of this dish is browning the thighs before they go in the oven, as then you can see the contrast of the crispy texture along with the velvety smoothness of the sauce. Feel free to make this dairy-free by replacing the heavy cream with coconut milk, and the butter with a plant-based spread. 

Marinated Crispy Chicken Thighs

This is one of my own recipes and is so simple to make as it only involves 6 ingredients. You just need one chicken thigh per person, some vegetable oil, salt, pepper, chilli powder and a bottle of Italian dressing. Yes, it’s that simple! 

The secret to success with this recipe is that you mix the chicken thighs with the other ingredients ahead of time and then leave them in the refrigerator for at least 2 hours to marinate. If you have the time, leaving them overnight will create an even more intense flavour!

Serve with steamed veggies and rice, or mashed potatoes if you prefer. You could even serve it alongside pasta such as orzo for a lighter more summery dish, with a drizzle of olive oil and some fresh basil leaves.  

Japanese Yakitori Skewers 

Yakitori skewers are a Japanese favorite often served as street food, or in small family-run cafes. They are nearly always made with dark meat from the thigh of the chicken because it’s more succulent and flavourful. 

Happily making your own at home couldn’t be easier as all you need is some deboned thigh meat, some skewers, some water and ingredients for the marinade which includes soy sauce, mirin, rice wine and vinegar. 

 

One of the best things about chicken yakitori is that the marinade is the same as the dipping sauce, so you don’t have to mess around making loads of different elements. 

Remember to soak your wooden skewers in water before you thread the chicken onto them, as this will stop them from burning/setting on fire when they hit the grill. 

Mexican pulled chicken thighs

To be honest, you can make this recipe with chicken breast if you want, but it just won’t have that depth of flavour you are looking for. The great thing about pulled Mexican chicken meat is that you can use it in a range of dishes from soft tacos, to enchiladas, to burritos to crispy tacos shells. You just need to add the accompaniments such as sour cream, grated cheese, and the relevant sauce.  

When you get to the pulling part of the recipe you can use two forks, although if you cook it a lot you may wish to invest in some meat claws as they make shredding the chicken super quick and easy, which is particularly good news if you have a big batch to work through. 

Balsamic Basil Chicken

Last, of all, we have Balsamic Basil Chicken which takes a mere 10 mins to prep and 30 to cook all in the same pan. The main ingredients of this dish are the chicken thighs along with cherry tomatoes, balsamic vinegar and olive oil. All of which provides a distinctly Italian flavour to the recipe. 

Again this is a dish that is best prepared ahead of time because the longer it has to marinate, the fuller the cooked flavours will be. Don’t forget to add some shaved parmesan to the finished product as you serve along with a green salad and some delicious crusty bread to mop up all the savoury juices.
