    "Colorado and Wyoming are America’s highest states, averaging 6,800 feet and 6,700 feet above sea level. Utah comes in third at 6,100 feet, New Mexico, Nevada, and Idaho each break 5,000 feet, and the rest of the field is hardly worth mentioning. At 3,400 feet, Montana is only half as high as Colorado, and Alaska, despite having the highest peaks, is even further down the list at 1,900 feet. Colorado has more fourteeners than all the other U.S. states combined, and more than all of Canada too. Colorado’s lowest point (3,315 feet along the Kansas border) is higher than the highest point in twenty other states. Rivers begin here and flow away to all the points of the compass. Colorado receives no rivers from another state (unless you count the Green River’s brief in and out from Utah). Wyoming’s Wind River Range is the only mountain in North America that supplies water to all three master streams of the American West: Missouri, Colorado, and Columbia rivers." Gin Watermelon Cocktail - Kinfolk 1This recipe is perfect for any Canada Day or Independence Day celebration. The combination of gin and grilled watermelon make it such a fun and summery drink. The best part is, this recipe serves four people (or one thirsty individual)!

Kinfolk_Vol16_TickledPink-4Pink Gin Cocktail With Grilled Watermelon (Kinfolk Magazine)

This refreshing cocktail will start off your warm summer evening right with a kick of gin, honey, lime and verbena.

Ingredients:

1/2 medium seedless watermelon (about 2 1/4 pounds or 1 kilogram)
4 fluid ounces (120 milliliters) gin
1 tablespoon honey, preferably acacia 3 limes
1/4 cup (5 grams) fresh lemon verbena, lemon balm or mint leaves, plus more for garnish
1/4 cup sugar
Ice cubes, for serving

Method:

1. Peel the watermelon and cut half of it into small cubes and the other half into larger wedges. Put the cubes into a blender along with the gin and honey. Add the finely grated zest and juice of the first lime, plus the juice of a second lime. Blend until the mixture is smooth and frothy. Let the cocktail stand for 5 minutes to infuse the flavors.

2. Pulse the lemon verbena and sugar in a food processor until the herb is very finely minced and blended with the sugar. Transfer the mixture to a small plate and set aside.

3. Meanwhile, heat a grill pan over high heat until smoking hot. Grill the watermelon wedges until marks appear, 1 to 2 minutes per side. Arrange the grilled melon on a platter and sprinkle with the finely grated zest and the juice of the third lime and a little coarsely chopped lemon verbena.

4. Rub the rim of 4 cocktail glasses with one of the squeezed limes to lightly moisten, then dip it in the sugar mixture to get an even coating. Fill the glasses with ice and pour in the cocktail through a fine strainer. Serve immediately with the warm grilled watermelon.

in june

Screen Shot 2015-06-30 at 1.02.25 PMJune was an incredibly eventful month; probably the most eventful of the entire year thus far. So what happened? Here are my video summaries of all of the celebrations.

At the beginning of the month, my husband and I celebrated our fifth wedding anniversary. I was given a new ring, and we relived the morning that we eloped by taking photographs at the same locations as we did on our wedding day. It was an emotional day, to look back at how our lives have changed over the last five years. Yet, we are in a better place today than ever before. Really, it was bittersweet.

After our trip down memory lane, my mum and I physically took a trip to British Columbia, Canada. At the time, I wasn’t feeling too thrilled about it, only because I was being a selfish daughter and wasn’t wanting her to move away from me. However, upon returning, I realized just how much she loves and looks forward to living in her new home. There was no way I could hold that against her, and so now I do honestly feel excited for her to begin a new adventure. My mum’s letter to my sister and I only made my feelings regarding her decision even stronger.

Another huge and important event that took place this month was the fact that our home was featured on A Beautiful Mess! I am still in awe of that occurrence, and am so excited at all of the new followers that I have gained and people who I have met as a result. Talk about an eventful month.

I also mentioned some great movies that were not to be missed. Have you seen any of these films yet?
