recipe: drop biscuits in shrimp casserole

This is a rich and savory meal that is packed full of flavor and comfort. Enjoy!

Drop Biscuits in Shrimp Casserole

Ingredients:

(For the biscuits)

2 cups all-purpose flour
1 tbsp baking powder
2 tbsp sugar
¼ tsp salt
½ cup butter, melted
1 cup milk

(For the shrimp casserole)

300 g peeled shrimp, thawed
½ cup corn, frozen
½ leek, chopped
1 garlic clove, chopped
½ tbsp salt
pepper, to taste
3 tbsp butter
¼ cup canola oil

Steps:

For the biscuits

1. Preheat oven to 450°F. Mix the first four ingredients together in a medium-sized bowl. Then add the final ingredients, stirring until just combined.

2. Place parchment or aluminum foil onto a large cookie sheet. Grease well. Using a tablespoon, drop twelve biscuits onto the sheet.

3. Place in oven, and bake for approximately 12 minutes, or until golden brown. Remove from oven, and let cool.

For the shrimp casserole

1. Preheat oven to 400°F. Place six fresh biscuits in an oblong casserole dish. Then add the shrimp, corn, leek, garlic, salt, and pepper. Drop the butter on top of the casserole mixture. Drizzle with oil, and place in oven for 30 minutes, stirring halfway through. Serve hot.

Christmas Recipes: Broccoli Casserole.

IMG.jpgFor the month of December, I will be featuring a number of recipes on Hello Scarlett. This will be in preparation for Christmas, but will also be delicious comfort food for those cold, winter nights. Whether you decide to try these out or not, I hope that they will help you get into the holiday spirit! 

This is what you will need:

(as well as)

1/2 cup shredded cheese

1/8 cup butter

IMG_6.jpg1. In a medium saucepan, combine butter, soup, and water over medium-high heat. Bring to a boil. Turn down heat and add broccoli. Cook for a few minutes longer.

2. Remove from heat. Pour mixture into a casserole dish. Top with a layer of crackers. Sprinkle with cheese. 

3. Place in preheated oven at 350°F. Bake for 30 minutes.

IMG_7.jpgThis first food post is a good one in that it is quick and filling. Health aside, it is also very yummy! Isn’t that what December meals are all about? We’ll start to eat better in the New Year, I promise. ;-)

vegetarian spaghetti with meatless meat.

i am a vegetarian, and have been for nearly three years. that is not to say that i don’t miss meat. in fact, my daily menu consists of some sort of a meat substitute, generally at supper time. whether it is a veggie burger, veggie hotdog, or veggie ground beef, i try to incorporate at least one of these miracle products into my meals!! delicious, quick, and safer than real meat, i thought that i would share my vegetarian spaghetti recipe with you this week (and perhaps convert at least one of you into a once-a-week-vegetarian).

you will need:

1 box of spaghetti (whole wheat is best)

1 package of vegetarian ground beef

olive oil

vegetables of choice (i used a green pepper, tomato, zucchini, and parsley)

salt + pepper

tomato sauce (optional)

cheese (optional)

in a large sauce pan begin to boil the spaghetti. remember that whole wheat noodles take additional time.

meanwhile chop the vegetables and combine them into a large frying pan. cook over medium heat. add salt and pepper.

when vegetables begin to brown, add the veggie ground beef. continue to cook for a few minutes. (if you wish to have tomato sauce, add it now).

once ready, remove spaghetti from heat. drain and set aside. remove veggie mixture from heat. combine the two, add cheese, parsley, and voila!
