vegan strawberry + banana crumble

Happy New Year!

I personally love to celebrate the beginning of a new year with a healthy recipe post. Today will be no different! Here is a recipe for a delicious and healthy dessert for those of you who have a vegan sweet tooth.

Vegan Strawberry + Banana Crumble

For the strawberry jam:
2 cups strawberries, halved

2 tbsp pure maple syrup

For the oatmeal crumble:
1 cup oat flour

1 ½ cup large flake oats
2 tbsp brown sugar
½ tbsp cinnamon
½ tsp baking soda
¼ tsp salt
½ cup unsweetened applesauce
¼ cup pure maple syrup
¼ cup vegetable oil
½ tsp vanilla extract
1 cup bananas, sliced
1 tbsp large flake oats
soy margarine, to grease

Steps:

1. Preheat oven to 325°F. Grease an 8×8 in. baking dish with soy margarine. Set aside.

2. In a small saucepan, add strawberries and maple syrup. Stir over medium heat for approximately 5 minutes. Mash the strawberries into a jam. Continue to stir and mash for another 5 minutes. Place in refrigerator to cool.

3. In a large bowl, combine oats, flour, sugar, cinnamon, salt, and baking soda. Add applesauce, maple syrup, oil, and vanilla. Mix thoroughly.

4. Remove half a cup of the oats. Spread the rest of the mixture evenly into the baking dish.

5. Place sliced bananas on top of the oats. Top with the strawberry jam mixture. Then spread the remaining oat mixture on top. Sprinkle the last of the large flake oats.

6. Put in oven and bake for 30 minutes. Let cool before serving.

recipe: apple and prune crumble

We are big connoisseurs of prunes in our household. Or perhaps I shouldn’t say “we” so much as Remy. We quickly discovered that if she didn’t consume prunes on a daily basis, she would not be able to do what prunes make you do that day. I realize that is too much information, but these things are important! As Stephen King wrote, “a regular man is a happy man.” Same thing goes for babies.

Remy ate pureed prunes on a daily basis from the time she started solids until she was a year old. It was dessert to her. Lately she hasn’t been enjoying baby food, and so we switched her to an all finger-food diet. Prunes are still too tough to eat when you only have four teeth, so we had to find a creative way to cook them for her. This recipe is the answer.

Apple and Prune Crumble:

Ingredients

1 cup rolled oats
⅔ cup flour
1 cup brown sugar
1 ½ cups prunes, sliced
1 cup apples, peeled and cubed
2 tsp cinnamon
1 tbsp margarine
⅓ tsp salt

Steps

1. Preheat oven to 350°F. Combine prunes, apples, ½ cup brown sugar, and 1 tsp cinnamon in a medium pot. Cook on low heat until apples are soft.

2. In a bowl, mix together flour, oats, 1 tsp cinnamon, margarine, salt, and remaining brown sugar. Set aside.

3. Pour the fruit mixture into a baking dish. Top with the crumble. Place into the oven and bake for 30 minutes.

Adding apples and turning it into a crumble ensures that babies and adults alike can enjoy it! Try it out for yourselves.

a damn good rhubarb dessert

01Hey guys. One quick question. Do you like rhubarb? I mean, really like it? Like it more than any other vegetable around? I do. I just cannot get enough of this tart treat. I actually tried rhubarb flavoured soda the other day at a vegan restaurant, and it was the best soda that I’ve ever had. Like, ever.

One thing that I look forward to every summer is adding rhubarb to all of my desserts. Whether it’s in pie, muffins, cake, crumble, or a sauce all by its lonesome, whichever foods are socially acceptable to combine it with, I will be doing it. I guaran-damn-tee it!

Sort of as a joke, but also out of curiosity, I picked up an old cookbook at the library called “The Hutterite Community Cookbook.” Old as in 2002. Which, in today’s standards, with the millions of new food fads and diets out there, that’s ancient. However, it is the 3rd expanded edition, so you know that whatever kick-ass recipes are in the book have been tried and perfected among the Hutterites. Maybe I shouldn’t have put kick-ass and Hutterite in the same sentence. Twice.

05FYI, the copyright page in this cookbook informs me that, “No part of this publication may be reproduced or transmitted by any means, electronic or mechanical … without permission in writing from the publisher.” So I apologize in advance to any members of the Hutterite colony for using, albeit tweaking, one of their rhubarb recipes (not to mention swearing in this post). Feel free to contact me if you would like me to remove it. Until then, all is fair in love and war (and baking)!

03Rhubarb Cake:

Cake:

2 cups sugar
1/2 cup butter

2 eggs
1 teaspoon lemon extract
1 cup milk
1 cup sour cream
2 cups flour
2 cups chopped rhubarb
2 tbsp cinnamon

Icing:

3 cups icing sugar
1/2 cup butter

splash of milk
1 tsp vanilla extract

07Steps:

1. Cream sugar, butter, and eggs together. Add remaining ingredients in order given; mix well. 

2. Pour into a large, greased cake pan. Spread evenly.

3. Bake at 350°F for 45 minutes. Let cool.

4. Combine icing in medium bowl. Spread evenly over cake. 

5. Place in refrigerator until its ready to eat!

06This was honestly such an amazing dessert. If I were to change one thing, it would be to line the bottom of the cake pan with a crumble. Other than that, chalk up one major success to the Hutterites!
