recipe: checkered cookies

This recipe was largely inspired by the Checkerboard Cookies found in the recipe book “Fika.” The recipes in it are so simple, delicate, and tasty, I thought that using one to serve at Easter (and beyond) would be a nice treat. 

Checkered Cookies

Makes 2 dozen

Ingredients:

1 cup butter, softened
1/2 cup granulated sugar
1/2 tsp vanilla extract
1/2 tsp lemon juice
2 cups all-purpose flour
2 tbsp unsweetened cocoa powder

Steps:

1. In a medium bowl, combine the butter, sugar, vanilla extract, lemon juice, and flour. Mix well and form into a soft dough.

2. Separate into two pieces, placing one in another bowl. Sprinkle cocoa powder over one half of the dough. Mix well.

3. Divide the light and dark doughs into two pieces each- making four in total. Form each piece into a log approximately 1 inch in diameter. Carefully place one light log next to a dark one. Then place one dark log on top of a light one, and the remaining light log on top of the dark one. Wrap in plastic wrap and refrigerate for at least 30 minutes.

4. Preheat oven to 350°F. Remove dough from fridge and wrap and cut into approximately 24 equal pieces. Put cookies onto a non-stick cookie sheet and bake for 10 minutes. Let cool before removing from sheet.

kitchen makeover

Screen Shot 2015-11-06 at 12.27.15 PMOn our most recent visit to IKEA, I made sure to grab the latest catalogue as we were leaving. Oh-Em-Gee. Has anyone else looked through it yet? I think that I may have gotten drool on every page. I instantly wanted to update every room in The Little Barn. First, let’s start with the kitchen.

As a reminder, this is what our kitchen currently looks like.

IMG_0061IMG_0071IMG_0074I feel that it’s overcrowded, and I’ve never really been to keen on the layout. I plan to move our 9′ church pew outdoors, put the kitchen island under the window, order bottom cabinets for the wall with the crates, and move our giant table into the middle of the room.

Here is my inspiration for our new Scandinavian look.

Christmas Recipes: Vanilla Boomerangs.

1 1/2 cups all-purpose flour

5 1/2 oz butter

3 drops vanilla extract

1/4 cup sugar

red sprinkles

1. Preheat oven to 350°F. Mix together flour, butter, vanilla, and sugar.

2. Transfer dough to floured baking board and divide into 40 pieces. Roll into narrow lengths of about 2 inches. Bend them into boomerangs and place on baking sheet lined with parchment paper. Add sprinkles.

3. Bake for 12 minutes.

4. Remove and wallow in their scrumptiousness!

They were incredibly easy to make, and taste much different than the sugar cookies that I grew up with. If you were wanting a tiny, pretty, and delicious treat this Christmas, you should definitely try these!

cheap monday.

i first came across cheap monday clothing through my store. before i list anything, i research the brand name so i might give a more accurate description of the item. then i do a little write-up of the brand’s history and put the item up for sale. cheap monday had such an interesting back story, that i could not help but fall in love with the brand.

my mum learned of my fascination for this clothing line, and just because she’s my mum, she bought me 3 items.
